Recipe for white asparagus puree with lemon

The sweetness of white asparagus, the acidity of lemon in a small, balanced dish.

The ingredients

  • 2 white asparagus spears, approximately 150g each once peeled
  • 1 potato
  • 1/2 plain yogurt
  • 1 lemon juice

The recipe

  1. Wash and peel the asparagus and potato. Dice the potato and cut the asparagus into pieces. Steam the potatoes for 20 minutes. After 10 minutes, add the asparagus.
  2. In the mixing bowl, put the asparagus, potato and yogurt (feel free to add cooking water if needed).
  3. Add the lemon juice to the mixture and mix one last time.

You can substitute green asparagus for white asparagus. Both vegetables have the same properties, but their flavors are noticeably different.
