Cream of mushroom soup with fresh cheese recipe

Recette velouté de champignons au fromage frais

A delicious recipe, suggested by blogger Little Gabchou!

THE INGREDIENTS

(for 3 portions of 200g)

  • 500g of seasonal mushrooms
  • 1 small onion
  • 2 carrots
  • 1 pinch of cumin
  • A few parsley leaves
  • Fresh cheese or yogurt
  • Pre-cooked organic corn polenta

THE RECIPE

  1. Wash, peel and cut the vegetables.
  2. Steam the vegetables for about 15 minutes.
  3. Bring 200ml of water to a boil and pour in 4 tablespoons of polenta. Let the polenta cook for 5 minutes, until the mixture is fairly thick.
  4. Blend the cooked vegetables with the cooking water to obtain a liquid mixture, then add the cooked polenta. You can add a few flat-leaf parsley leaves to the blender for flavor and a pinch of cumin.
  5. You can add a teaspoon of cream cheese or Greek yogurt to enhance your dish!
