Recipe for chard, zucchini, filet mignon and Grana Padano puree

Un bouquet de blettes fraîches avec des feuilles vertes et des côtes blanches, posé sur une table en bois.

The great return of chard, flavored with Grana Padano!

The ingredients

  • 120g of Swiss chard
  • 1/2 zucchini
  • 1 small potato
  • 20g of filet mignon
  • 1 teaspoon of Grana Padano
  • 1 teaspoon of fresh cream

The recipe

  1. Wash and spin dry the chard. After removing the stringy part, cut the white part into pieces and roughly chop the green leaves.
  2. Wash your zucchini, then cut it into small cubes (after removing the seeds if necessary). Do the same with your potato.
  3. Cook the chard, courgette and potato for 15-20 minutes, until tender.
  4. Blend everything in a food processor, and chop more or less finely. Add the teaspoon of crème fraîche and Grana Padano. Mix well.
  5. Take a 20g slice from your fillet. Fry it in a lightly oiled, hot pan. Once cooked, blend it and add it to the vegetable puree!

Stories about chard

Like its colleagues spinach, leeks or mushrooms, chard tends to shrink considerably when cooked…don’t be stingy with the quantity!

You can of course replace the Grana Padano with Parmesan, which is stronger, but just as tasty.
