Recette purée de blettes, courgettes, filet mignon et Grana Padano

The big comeback of Swiss chard, flavored with Grana Padano!

The ingredients

  • 120 g of chard
  • 1/2 zucchini
  • 1 small potato
  • 20 g of filet mignon
  • 1 teaspoon of Grana Padano
  • 1 teaspoon of crème fraîche

The recipe

  1. Wash and spin dry the chard. After removing the stringy part, cut the white part into pieces and chop the green leaves more roughly.
  2. Wash your zucchini, then cut it into small cubes (after removing the seeds if necessary). Do the same with your potato.
  3. Cook the chard, zucchini and potato for 15-20 minutes, until tender.
  4. Blend everything together and chop more or less finely. Add the teaspoon of crème fraîche and Grana Padano. Mix.
  5. Take a 20g slice from your fillet. Brown it in a lightly oiled, hot pan. Blend it once cooked, and add it all to the vegetable puree!

Like its spinach, leek and mushroom counterparts, Swiss chard tends to shrink considerably when cooked...don't be stingy with the quantity!

You can of course replace the Grana Padano with Parmesan, which is stronger but just as tasty.
