The short history of cauliflower

The term "cauliflower" appeared in the French language in 1611. It comes from the Italian "cavalo-fiore," and before taking its current form, this vegetable was called "coliflori" in French. Highly prized by Kings Louis XIV and Louis XV, numerous preparations were developed during their reigns. By the end of the 19th century, nearly twenty varieties of cauliflower were being produced in France, which had become one of the leading countries specializing in this vegetable. In short, a truly regal dish!
