Recipe for white asparagus puree with lemon

Recette purée d'asperges blanches au citron

The sweetness of white asparagus, the acidity of lemon in a small, balanced dish.

The ingredients

  • 2 white asparagus spears of approximately 150g once peeled
  • 1 potato
  • 1/2 natural yogurt
  • 1 lemon juice

The recipe

  1. Wash and peel the asparagus and potato. Dice the potato and cut the asparagus into chunks. Steam the potatoes for 20 minutes. After 10 minutes, add the asparagus.
  2. In the blender bowl, put the asparagus, potato and yogurt (don't hesitate to add cooking water if necessary).
  3. Add the lemon juice to the mixture and mix one last time.

Did you know?

You can substitute green asparagus for white asparagus. Both vegetables have the same properties, but their flavors are significantly different.
